Hi

When I am attacking someone by mission: Field battle - do I get any resources from him, when I win? Do I get them when he hasnt any army in the field?

And what about pillaging? Do I fight with army garisoned in fortress? or how does it work?

Field battle:  you fight with troops that are in field , you do not get resources that are in fortress. In V4 player can set army on retreat and then defending army don't fight, in V5 retraet option is not possible.

Pillage is same as field battle + that you kill workers and get gold and mil points for that  .

With field battle and pillage your troops do not fight against troops in fortress.
